I love bola bola siopao :) I will also be posting on how to make the asado filling... soon :D
Ingredients:
6 cups flour 1 3/4 cup warm water 1/4 cup sugar 1 tbsp active dry yeast 1 tbsp baking powder 2 tbsp shortening
Bola Bola Filling:
1 1/2cups ground pork 1/4 cup shrimps, chopped 1/4 cup onions 1/4 cup chopped black fungus (tenga ng daga or wood ear mushroom) 3 cloves
garlic, minced salt, pepper, magic sarap to taste 1 raw egg 2 tbsp. corn starch 2 pc salted egg, cut into pieces
Directions:
Place warm water in a bolw then add the sugar and yeast. Stir for a minute. Let it sit for about 10 to 15 minutes.
In a mixing bowl, add the flour and baking powder. Stir. *does not need to sift*
Add the yeast mixture and shoterning to the dry ingredients and mix well.
Knead the combined mixture until the texture of the dough becomes fine. *if the dough feels dry, add just a little cold water and continue to knead*
Let the dough rise for at least 2 hours.
Knead the dough again for about 10 minutes.
Flatten the dough until a round shape is formed using a rolling pin.
Put the bola-bola filling on the middle of the flattened dough and wrap.
Place the siopao in steamer and steam for 20 minutes.
Serve hot.
The Filling:
Mix well ingredients except salted egg. Form into 1 inch ball. Use to fill siopao together with 1 piece salted boiled egg.
